Kate went from being a life-long vegetarian to become a butcher? She shares that her passions led her to grassland management, which investigates how we can use animals to better the grasslands and found it’s a great way to sequester carbon. At the same time, she was struggling with some anxiety, depression and GI issues, and she decided to heal her body at the same time as the land.
