Stuffed Sweet Potatoes from Black Girls Gone Vegan

  • 2 large, sweet potatoes (scrubbed)
  • 1/2 cup of brown rice
  • 2 handfuls of spinach
  • 1/2 cup black beans
  • 1 teaspoon of granulated garlic
  • 1 teaspoon of paprika
  • 1 teaspoon of olive oil
  • black pepper to taste
  • 1/2 teaspoon Agave (optional to taste)


  1. Preheat oven to 400 F
  2. Pierce each sweet potato several times with a fork. Place whole sweet potatoes on baking sheet with lined foil Bake until tender approx 45 minutes
  3. Remove from the oven and wait until it’s cool enough to handle then make a slit in the tip of each potatoes
  4. Add 1/2 teaspoon of agave to sweet potatoes (optional) Top Sweet potatoes with Sautéed spinach, black beans and brown rice. Or stuff with your favorite vegetables (optional)
