Spinach Scramble

Try this spinach scramble breakfast recipe from Dr. Phil's latest book, The 20/20 Diet .

Ingredients:

  • 1 large egg
  • 1/2 teaspoon minced garlic
  • 1 tablespoon extra-virgin olive oil
  • 1 1/2 cups fresh spinach

Directions:

  1. Whisk the egg and season with garlic.
  2. In a medium pan, scramble the egg with olive oil and spinach.
  3. Pair with one small apple of choice, such as a Red Delicious, Golden Delicious or Granny Smith, with the skin on.
