Protein Pancakes

Ingredients

  • 3 whole organic eggs 
  • 1 ½ scoop of protein powder
  • 1 tablespoon of cinnamon
  • 1 tablespoon of baking powder
  • Dash of salt
  • 1 banana
  • 1 cup of oats
  • 1 tablespoon of almond butter
  • Strawberries and blue berries for garnish

Instructions

  1. Mix all ingredients before banana in blender
  2. Heat up a frying pan with cooking spray
  3. Pour mixture into the frying pan
  4. Sprinkle a handful of blueberries into the pancake
  5. Dice 1 banana and 1 strawberry in an angle and put on top
  6. Dice 1 strawberry into an angle
  7. Pour a tablespoon of honey onto the pancakes

Ahi Tartar

Ingredients

  • 300 grams of sushi grade Tuna, cut into small cubes
  • 1 avocado, chopped into small pieces
  • 4 green onions, finely chopped
  • 2 tbsp toasted sesame seeds
  • 1/2 cup diced cucumber
  • A handful of cilantro, chopped
  • 1 tbsb lime juice
  • pinch of salt & pepper

Instructions

  1. Combine tuna and avocado
  2. Top with all other ingredients

Reina Pepiada Tacos

Ingredients

  • 1 cup of cooked shredded chicken (it can be baked, rotisserie, boiled – whichever chicken you have left over)
  • 1 avocado
  • ¼ cup of finely chopped almonds
  • 2 tablespoons of olive oil
  • 2 or 3 romaine lettuce leaves

Instructions

  1. Mix chicken with avocado and add 2 tablespoons of olive oil, salt, pepper and almonds.
  2. Use the lettuce leaves for shells.
