Creamy Avocado Dressing 

Ingredients

  • 1 medium avocado
  • 1 tablespoon fresh cilantro, minced, or more to taste
  • 1 clove garlic
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lime juice
  • 1/2 cup plain yogurt, plain kefir, or plain drinkable yogurt
  • Salt and freshly ground black pepper to taste

Instructions

  1. Cut avocado in half, removing pit and scooping flesh into a blender or food processor. 
  2. Add cilantro, garlic, olive oil, lime juice, and yogurt or kefir, and puree until smooth. 
  3. Add water if needed to thin to desired consistency. 

 

 

Superstar Salsa 

Ingredients

  • 2 15-ounce cans petite diced tomatoes OR 2 pounds ripe fresh tomatoes
  • 1 medium onion, yellow or red, chopped
  • 2–4 garlic cloves, minced
  • Juice of 2 small limes
  • Dash of salt
  • 1 jalapeño pepper, seeds removed, minced (or use some seeds for extra heat)
  • 1/4 cup chopped fresh cilantro (or more to taste) 

Instructions

  1. If using canned tomatoes, drain some or all of the juice, if desired. If using fresh tomatoes, chop into half-inch pieces; drain some or all of the juice if desired. 
  2. Combine all ingredients in a bowl and mix gently. 

 

 

Homemade Hummus 

Ingredients

  • 2 cups canned chickpeas, drained 
  • 1/4 cup extra-virgin olive oil 
  • 2 cloves garlic, minced 
  • 2 tablespoons tahini 
  • 1 teaspoon ground cumin 
  • Juice of 1 lemon 
  • Fresh parsley, chopped

Instructions

  1. Put everything but the parsley in a food processor and process until smooth. Sprinkle with parsley before serving.

 

 

Cool Cucumber Yogurt Dip 

Ingredients 

  • 2 containers (5–6 ounces) plain Greek yogurt
  • 1/2 small cucumber, chopped into very small pieces
  • 1 garlic clove, minced
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons fresh dill or fresh mint, minced
  • Dash of cayenne pepper

Instructions

  1. Combine all ingredients and mix well. 

Greek Dip

Ingredients 

  • 1 cup chickpeas, drained
  • 2 tablespoons olive oil
  • 2 tablespoons fresh oregano, finely chopped
  • 10 large black olives, chopped

Instructions

  1. Mash beans with a fork. Add olive oil and oregano and mix well. Top with black olives. 

Creamy Avocado White Bean Dip 

Ingredients 

  • 2 small avocados, ripe 
  • 1/2 cup cooked or canned white beans, drained 
  • 1 container (5–6 ounces) plain Greek yogurt 
  • 1 teaspoon lime juice 
  • 1/4 cup red onion, diced 
  • 1/4 jalapeño pepper with seeds, minced (optional) 
  • 1/2 cup chopped tomato 
  • 1 tablespoon fresh cilantro, chopped, plus extra for garnish 
  • 1 garlic clove, minced 
  • Dash of salt 

Instructions 

  1. Cut avocados in half, remove pit, and scoop flesh into a bowl. 
  2. Mash with a potato masher or fork. In a separate bowl, mash beans with a potato masher or fork. 
  3. Combine avocado, beans, and yogurt. Mix in lime juice, red onion, jalapeño (if using), tomato, cilantro, garlic, and salt. Stir well. 
  4. Garnish with cilantro before serving. 

White Bean Spread

Ingredients

  • 1 16-ounce can white beans, drained
  • 2 garlic cloves
  • 2 tablespoons olive oil
  • 1 tablespoon plus 1 teaspoon fresh minced herbs, separated (use pars¬ley, rosemary, thyme, cilantro, basil, or any other fresh herbs)
  • 1 teaspoon fresh lemon juice

Instructions 

  1. Combine all ingredients except the 1 teaspoon minced fresh herbs in a food processor.
  2.  Process until creamy. Spoon into a bowl; sprinkle with remaining herbs. 

Spinach-Onion Hummus Dip 

Ingredients 

  • 2 cups fresh spinach 
  • 2 cups canned chickpeas, drained 
  • 1/4 cup extra-virgin olive oil 
  • 2 cloves garlic, minced 
  • 2 tablespoons tahini 
  • Juice of 1 lemon 
  • 2 tablespoons fresh chives, chopped 

Instructions 

  1. Put everything but the chives in a food processor and process until smooth. 
  2. Sprinkle with chives before serving.
