
Apple Cinnamon Crepe Recipe

Ingredients: Filling
- 1/2 cup natural light whipped cream
- 1⁄4 cup light/reduced-fat cream cheese, room temperature
- 1/4 cup fat-free plain Greek yogurt
- 2 packets natural no-calorie sweetener
- 1 tsp. vanilla extract
- 1/4 tsp. cinnamon
- 1/2 cup finely chopped Fuji or Gala apple
Ingredients: Crepes (2)
- 1/2 cup (about 4 large) egg whites or fat-free liquid egg substitute
- 1 /12 Tbsp. plain protein powder
- 1 packet no-calorie sweetener
- 1/4 Tsp. vanilla extract
- 1/8 tsp. cinnamon
Instructions
- For crepes, whisk all ingredients in a medium bowl until uniform
- Bring a 10-inch skillet sprayed with nonstick spray to medium heat. Pour half of the batter into the pan, quickly tilting the skillet in all directions to evenly coat the bottom. Cook until lightly browned, about 1 1/2 minutes per side.
- Repeat to make second crepe.
- For filling: mix all ingredients except crepes and apple and divide mixture between crepes
- Top with apple, and roll up crepes over the filling
