Dharma's Kale Salad Recipe

Ingredients 

  • 1 head lacinato kale
  • Pinch of sea salt
  • 1 small avocado
  • 3 Tbs. nutritional yeast
  • Cayenne pepper, to taste
  • 2 handful sprouts, any kind
  • 1 tomato, cubed
  • Juice of a lemon
  • 1-2 Tbs. dulse flakes (totally optional)
  • Handful of dill, parsley or cilantro, or combination (optional)

Instructions 

  1. Tear the kale leaves off the stem and place into a mixing bowl
  2. Add a pinch of sea salt, and tear into bite-sized pieces
  3. Core and scrape out the avocado flesh into the bowl, and massage the kale with the avocado and lemon juice
  4. Mix in the nutritional yeast and cayenne pepper
  5. Then, mix in the sprouts, tomato and dulse flakes, herbs of choice and add a little more sea salt, if desired

Mushroom & Napa Cabbage Lime Stir-Fry 

Ingredients

  • 1 cup cooked quinoa
  • 1 tsp. coconut oil
  • 1 cup crimini mushrooms, sliced
  • 1 ½ cups of cabbage, sliced
  • 1 ½ tsp. coriander powder
  • 1 ½ tsp. cumin powder
  • 2 Tbs. lime juice
  • Sea salt, to taste
  • Chopped fresh cilantro, for topping

Instructions 

  1. Heat the coconut oil over medium heat, and add the mushrooms and cabbage
  2. Stir well for a few minutes until the veggies soften
  3. Add in the coriander powder
  4. Turn off the heat and stir in the lime juice, and sea salt to taste
  5. Top with fresh cilantro
  6. Serve fresh with the quinoa
  7. Enjoy!

Gingerbread Banana Nicecream 

Ingredients

  • 3 frozen bananas
  • ¼ cup almond milk
  • ⅓ cup pecans
  • 1 tsp cinnamon
  • ½ tsp. vanilla extract
  • ½ tsp. sea salt
  • *Optional toppings: sliced bananas, crushed pecans, cinnamon

Instructions 

  1. Blend all ingredients together
  2. Top with toppings of your choice
  3. Enjoy!
