Instead of a Creamy Chocolate martini (or a White Russian): Have a cardamom rose cocktail as a meal cap with dark chocolate and a cup of berries

Cardamom Rose Cocktail

Recipe/Ingredients

  • 1 Cardamom Pod
  • 1.5 oz vodka
  • .75 oz simple syrup rose (make at home with rose water and simple syrup or buy)
  • .5 oz lemon juice
  • 1 oz grapefruit juice fresh, (ruby red preferably)
  • 2 dashes Peychaud’s bitters

Directions

Lightly muddle 1 cardamom pod at the bottom of shaker (not too much muddling or it will overpower the drink)
Add the rest of the ingredients
Add ice
Shake for 20 seconds
Strain over fresh ice to remove the cardamom pod
Add a splash of seltzer water
Garnish with rose petals or fresh lemon wedge (use organic if possible)

Instead of pesto on pasta: Have zucchini noodles with broccoli, pine nuts and walnuts.

 

 

Broccoli, Lemon, Pine Nut, and Walnut Sauce

Recipe/Ingredients

  • 8 cups broccoli florets (from about 1 3/4 pounds of broccoli)
  • 1/4 cup pine nuts and walnuts
  • 3 tablespoons olive oil
  • 1 tablespoon white wine vinegar
  • 1/2 teaspoon dried crushed red pepper
  • Grated Parmesan cheese

Directions

Cook broccoli florets in large pot of boiling salted water until just tender, about 6 minutes. Using slotted spoon, transfer broccoli to colander and drain.
In a saute pan, put in pine nuts, walnuts, olive oil, white wine vinegar, and crushed red pepper. Add in zucchini noodles; toss over medium-low heat until heated through. Season with salt and pepper. Serve, passing cheese separately.
