Featured Recipes from the "Cake Cleanse" Diet

Playing Eat Cake and Lose Weight?!

Can you really eat cake and lose weight, too? The Doctors try two recipes from the "Cake Cleanse" diet. Try them for yourself!

 

Chocolate Chip Brownies

 

Makes 9 squares.

Prep time: 10 minutes
Cook time: 20 minutes

Ingredients:

  • 40 g/ 1.4 oz oats
  • 1 can black beans, drained and rinsed
  • 70 g/ 2.5 oz maple syrup
  • 2 teaspoons vanilla extract
  • 2 very ripe bananas
  • 30 g/ 1.1 oz cacao
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 120 g/ 4.2 oz sugar-free chocolate chips
  • Extra chocolate chips for sprinkling 

Instructions:

  • Preheat oven to 180 degrees C/ 350 degrees F (no fan)
  • Grease and line a 20 cm x 20 cm/ 8 inch x 8 inch square baking dish.
  • Add the oats to the food processor and process until it becomes a fine flour. Set aside in a small bowl. add the drained black beans, maple syrup, vanilla, banana and cacao to the food processor and blend, scraping the sides of the bowl when necessary.
  • Next add the baking powder, salt and oat flour blend until incorporated.
  • Stir in the chocolate chips. Sprinkle extra chocolate chips over the top. Pour batter into the baking dish and bake for 20 minutes.
  • Remove from the oven and let the brownies sit in the pan for at least 10 minutes to set. Slice into squares.

Blueberry Memory Mug Cake

 

Serves 1

Prep time: 3 minutes
Cook time: 1.5 minutes

Ingredients:

  • 1/2 very ripe banana
  • 1 egg
  • 3 tablespoons light coconut milk
  • 1 teaspoon coconut oil, melted
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon coconut flour
  • 1/2 tablespoon granulated stevia
  • 1/4 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 12 blueberries

Instructions:

  • Grease a large microwave-safe mug.
  • In a bowl, mash the banana until smooth. Add the egg, coconut milk, coconut oil and vanilla, and whisk together with a fork. Add the coconut flour, stevia, cinnamon, and baking powder and mix well.
  • Stir in blueberries. Pour the mixture into the cup.
  • Microwave for 1.5 minutes. Enjoy directly from the mug or tip upside down onto a plate.
