

Zucchini Guacamole
Ingredients
- 1 small avocado
- 1 peeled and cooked down zucchini (You can do this by cutting it into cubes, placing them in a microwave-safe dish with a damp paper towel over top, and microwaving for 4-5 minutes).
- 1 teaspoon lime juice
- ¼ cup red onion, diced
- ¼ jalapeno pepper with seeds, minced
- ½ cup chopped tomato
- 1 tablespoon fresh cilantro, chopped
- 1 garlic clove, minced
- Dash of salt
Directions
- Mash avocado and cooked zucchini
- Mix in all other ingredients
- Stir well
