Dr. Stork’s Healthy Lentil Soup

Playing Drs. Rx: Will This Trend Replace the Juice Craze?

Lentil Soup 

Ingredients 

  • 1/2 cup diced onion
  • 1/2 cup diced celery 
  • 32 oz. vegetable broth
  • 2 tsp. turmeric
  • 15 oz can of diced tomatoes
  • 1 cup dry lentils 
  • 1 cup fresh spinach 
  • few sprigs of parsley 
  • optional: 2 tablespoons Greek yogurt

Instructions

  1. Sauté ½ cup each of diced onions and celery
  2. Once soft, add 32 oz. of vegetable broth, 2 tsp. of turmeric, 15 oz. of diced tomatoes, and 1 cup of dry lentils
  3. Let simmer for 25 minutes
  4. Stir in 1 cup of spinach 
  5. Garnish with parsley 
  6. Optional: swirl 2 tbs. of Greek yogurt into soup for extra creaminess
