Rainbow Slaw

Rainbow Slaw 


  • 2 tablespoons canola oil
  • 2 tablespoons cider vinegar
  • 1 tablespoon honey
  • 1 tablespoon fresh lime juice
  • 1/4 teaspoon salt
  • Freshly ground black pepper
  • 14-ounce package of shredded coleslaw veggies (green cabbage, red cabbage, and carrots) 
  • 1 small red bell pepper, cut into matchsticks


  1. To prepare the rainbow slaw, whisk oil, vinegar, honey, lime juice, salt, and black pepper in a large bowl
  2. Add in coleslaw veggies and red pepper matchsticks 
  3. Toss until veggies are coated with dressing
  4. Refrigerate until ready to serve
Spinach-onion hummus

Spinach-Onion Hummus Dip 


  • 2 cups fresh spinach 
  • 2 cups canned chickpeas, drained 
  • 1/4 cup extra-virgin olive oil 
  • 2 cloves garlic, minced 
  • 2 tablespoons tahini 
  • Juice of 1 lemon 
  • 2 tablespoons fresh chives, chopped


  1. Put everything but the chives in a food processor and process until smooth
  2. Sprinkle with chives before serving
