Cholesterol Lowering Artichokes with Avocado Dip

Ingredients

  • 4-5 artichokes 
  • 2 cups water 
  • 2 tablespoons sesame oil 
  • 2 small avocados or 1 1/2 large avocados
  • 1 teaspoon minced garlic
  • 4 Tbsp. chopped parsley 
  • Juice of 1 lemon
  • Salt to taste

Instructions 

  1. Preheat oven to 400 degrees F
  2. Trim and half artichokes, clean out thistle above the hearts carefully with a spoon and discard. Place artichokes into shallow oven-safe pan filled with water 
  3. Place in oven for 45 minutes to 1 hour or until they are falling apart tender
  4. Sprinkle each half artichoke with sea salt and then drizzle with sesame oil 
  5. Seed, peel and smash avocado. Place in a separate bowl with garlic, zest and strained juice of one lemon, and chopped parsley; mix. Sprinkle avocado mixture with sea salt to taste, adding more if needed
  6. Spoon avocado mixture into artichoke halves and serve
