Fluffy Cottage Cheese Eggs 


  • 2 eggs, beaten
  • ¼ cup small curd cottage cheese
  • Salt and pepper, to taste


  1. Combine the eggs and cottage cheese in a small bowl.
  2. Heat a small non-stick frying pan over medium/low heat.
  3. Spray with a little cooking spray like olive oil spray.
  4. Add the mixture to the pan.
  5. Cook for a few minutes, then slowly stir the eggs around with a wooden spoon.
  6. Continue cooking until the eggs are cooked through.
  7. Add salt and pepper.
  8. Serve immediately.
