Fluffy Cottage Cheese Eggs
- 2 eggs, beaten
- ¼ cup small curd cottage cheese
- Salt and pepper, to taste
- Combine the eggs and cottage cheese in a small bowl.
- Heat a small non-stick frying pan over medium/low heat.
- Spray with a little cooking spray like olive oil spray.
- Add the mixture to the pan.
- Cook for a few minutes, then slowly stir the eggs around with a wooden spoon.
- Continue cooking until the eggs are cooked through.
- Add salt and pepper.
- Serve immediately.
