Carrot Tomato Soup

Try The Doctors' carrot tomato soup for a beta-carotene and lycopene-packed dish you can make in your blender.

Ingredients:


• 4 whole tomatoes, canned
• 1 tbsp Italian seasoning (or seasoning of choice)
• 1 1/2 cups low-sodium warmed chicken or vegetable broth
• 1/2 white onion, chopped
• 3 whole carrots, chopped

Directions:
• Add ingredients to blender in the following order:
1. Tomatoes
2. Seasoning
3. Broth
4. Onion
• Pulse about five times or blend for five seconds.
• Add carrots.
• Blend to desired consistency.
• Pour into saucepan and warm to desired temperature.
