
Ingredients
- 5 oz spring mix
- 2/3 cup steamed beets, can use jarred or canned
- 1/4 cup feta, crumbled
- 2 tablespoons candied walnuts
- 2 tablespoons chopped red onion, optional
Dressing
- 1 tablespoon balsamic vinegar
- 2 tsp olive oil
- 2 tsp honey
- 1 tsp Dijon mustard
- Salt and pepper to taste
Instructions
- Whisk dressing ingredients together at the bottom of a large salad bowl. Assemble salad ingredients on top of the dressing. Use tongs to combine and serve immediately.
