Apple Cinnamon Chia Seed Pudding

Ingredients:

  • 1 1/4 cup unsweetened almond or coconut milk
  • 1/4 cup chia seeds
  • 1/2 teaspoon vanilla extract
  • 1 large organic apple, cored and chopped
  • 2 teaspoons cinnamon
  • Dash of nutmeg

Instructions:

  • Mix the milk, chia seeds and vanilla together in a small bowl.
  • Let rest for 15 minutes. 
  • Fold in the rest of the ingredients and enjoy or let sit overnight.
