Breakfast:

PB & Pom Pancakes

Ingredients

  • 1/4 cup flour
  • 3 tbsp Almond Milk
  • 1.5 tsp peanut butter
  • 1 tsp baking powder
  • Salt
  • 1/4 cup pomegranate juice
  • 2 tsp honey

Instructions

  1. Mix 1/4 cup flour, 3 Tbsp almond milk, 1½ tsp peanut butter, 1 tsp baking powder, and a pinch of salt. 
  2. Pour 2 circles onto a greased griddle over medium-low heat. 
  3. Cook for 3 minutes, flip, and cook 3 minutes longer. 
  4. Mix ¼ cup pomegranate juice* with 2 tsp honey in a saucepan
  5. Simmer until syrupy, 5 to 6 minutes

Lunch:

Udon Soup with Flank Steak, Snap Peas, and Ginger

Ingredients

  • 2 oz Udon Noodles
  • 1 cup vegetable stock
  • 2 tsp miso
  • 1/2 cup snap peas
  • 1 tsp minced ginger
  • 1/2 cup cubed flank steak 

Instructions

  1. Cook 2 oz udon noodles, rinse, and drain
  2. In a saucepan, bring 1 cup vegetable stock to a boil, lower heat, and add 2 tsp miso, stirring until dissolved
  3. Add 1/2 cup snap peas, 1 tsp minced ginger, and 1/2 cup cubed flank steak
  4. Cook until snap peas and steak are cooked through
  5. Stir in noodles

Snack:

Steamed Snap Peas with Miso Peanut Butter Dip

Ingredients

  • 1 tsp miso
  • 2 tsp hot water
  • 1Tbsp peanut butter
  • 1 tsp rice vinegar
  • 1 tsp honey
  • 1 cup steamed snap peas

Instructions

  1. Dissolve 1 tsp miso in 2 tsp hot water
  2. Mix with 1 Tbsp peanut butter, 1 tsp rice vinegar, and 1 tsp honey
  3. Serve with 1 cup steamed snap peas

Dinner:

Marinated Flank Steak with Snap Peas Citrus Salad

Ingredients

  • 4 oz flank steak
  • 2 tsp miso
  • 2 tsp rice vinegar
  • 2 Tbsp Canned mandarin orange juice
  • Tofu
  • 1 cup steamed snap peas
  • 1/3 cup mandarin oranges
  • 1/4 cup pomegranate seeds

Instructions

  1. Slice 4 oz Flank Steak into four planks and marinate in a mixture of 2 tsp miso, 2 tsp rice vinegar, and 2 Tbsp juice from a can of mandarin oranges for 10 minutes
  2. Reserve marinade
  3. Coat a grill pan with nonstick spray and cook tofu over medium high heat, about 1 minute per side
  4. Toss 1 cup steamed snap peas, 1/3 cup mandarin oranges, and 1/4 cup pomegranate seeds with reserved marinade, then serve with Flank Steak 

Dessert:

Ginger-Pom Poached Pear

Ingredients

  • 1/2 cup water
  • 2-1/2 cup pomegranate juice
  • 2 Tbsp honey
  • 1/2 inch piece ginger
  • 1 pear

Instructions

  • In a saucepan, combine 1/2 cup each water and pomegranate juice, 2 Tbsp honey, and ½-inch piece ginger, sliced
  • Add 1 pear, peeled, cored, and halved, and simmer until tender, 20 minutes
  • Remove pear and ginger from liquid and reduce to 1/4 cup, about 10 minutes
  • Serve pear with syrup and 2 Tbsp pom seeds
