This is not a joke even if it may sound like one. On the island of Sardinia the cheese known as “casu marzu” is eaten at weddings, big celebrations, and special occasions. This cheese is unique because... it is crawling with live maggots! It’s no surprise the translation means “rotten/putrid cheese.”
In case you want to whip up your own batch, here is how it's made. It starts with hard sheep’s milk that is left outside in the heat to decay for three weeks, until it is covered with cheese flies. The crust is then removed to allow the cheese flies to come inside and lay eggs. The cheese is then stored in a dark place for three months to allow the maggots to hatch.
This cheese is said to taste similar to gorgonzola and if you’re going to give it a try, there’s some things you need to know. If the maggots are dead on the cheese they are actually borderline poisonous, points out Dr. Mike Varshavski, so the maggots actually need to be alive. Dermatologist Dr. Sonia Batra adds that you have to chew the maggots thoroughly because if not they could stay alive and live in the intestines as parasites. OB/GYN Dr. Nita Landry blocks her eyes demonstrating what some people do when eating this cheese, since the maggots can jump up to 15cm!
