ER physician Dr. Travis Stork explains that if you eat the seeds whole, they could pass through the intestines undigested. Grinding the seeds allows the nutrients to pass through the digestive tract and get absorbed.
Dermatologist Dr. Sonia Batra adds that once the seeds are ground and exposed to air, they can oxidize, so she suggests storing them in an air-tight container in the refrigerator.
