Gluten Free

So i have to go gluten free and dairy free anyone have any info for me? It is so hard and there is no food at places like stater brothers that is GFree HELP!!!!!

Hi,

Check out diets for Celiac Disease (Gluten Free).  My father had Celiac Disease, and when he was diagnosed with this, there was hardly any information, but recently, more information has come out, thank god for the internet.  The following site is a great start.

Just found out I am gluten/giladin intolerant (may have Celiac Disease).  My doctor told me to avoid soy because it has the exact same molecular structure as wheat with the exception of one little tiny piece of the molecule!! I cannot find anything to substantiate this. He even wants me to avoid dairy. So restrictive and hard to find things that are GFCFSF (gluten/casein/soy free). HELP, please!!

I realize that this comment is  very late, but I hope it will help anyway. There is a dietician in Stockton, NJ that specializes in GFCF diets - she had to design one for her husband and then built a practice on it.  Her website is here: http://www.pickellnutrition.com/.  She has a cookbook on her site, and you can also consult with her.  

CFGF is not easy - I know.  I am GF and my daughter is CF.  It has taken a long time to find acceptable substitutes for the foods that we love. A couple of quick tips - just forget about cheese. If you love cheese, you won't find an acceptable DF substitute. So just give it up.  We make salami omelettes now and don't even miss the cheese. 

Good options for cream sauces and thickeners are mayonnaise and coconut milk. Almond Breeze almond milk is a great alternative to fluid milk (Silk brand is too thick). Earth Balance makes a great GFDF Soy-free margarine.

GF pasta is tricky - there are many different kinds, so switch to rice until you find a brand of GF pasta that you like. I have found 4 brands of GF breads that have good taste and texture: Udi's (best bagels), Rudi's (best sandwich bread), Grainless Baker (rye bread and rolls),  Canyon Bakehouse (best rolls) -- all can be ordered online.
