I missed a day of blogging...I wanted to write everyday...it seems to keep me on track. But, I was not well yesterday, terrible side pains, but they are gone now and I feel much better. I weighed my self yesterday and was at 162.2, then this morning I am back to 162.6...but it's OK. I am feeling lighter and feeling soooo much better. It's amazing how only a few days can make such a difference in the way you feel if you are eating right. I think I just didn't drink enough water yesterday, I don't know but I am not going to fret over that small of a gain, it will be gone again tomorrow (I hope). I cooked for what seemed like forever last night after I started feeling better. I made the Egg Plant Parm and the chicken soup from the book. I ate the Egg Plant Parm for dinner along with a small salad full of veggie and plan to eat on the soup this weekend. I tasted the broth while I was cooking it...YUM! Now, I have no excuse in not eating right over the weekend since there is a ton of soup in my fridge. I did tweek the recipe a little...I did not have any okra and I did not add the crushed tomatoes (I don't like cooked tomatoes in soup). I added leeks that is not called for in the recipe as well and pretty much doubled everything to make extra. I am going to eat the soup for lunch today so I will report tomorrow on how good it tastes. Although the scale didn't show a lower number something must be happening, my rings are so much looser as they are flailing everywhere as I type...yeah! The Egg Plant was ok...not bad I guess, the recipe was enough for two servings (so the book says) so I will probably have it again tonight for dinner so it doesn't go to waste. I am in good spirt's today and hope this good feeling lasts...I think it being Friday also helps...have a wonderful weekend everyone!
