Balsamic Grilled Chicken Breasts - Cycle 1

1/2 c balsamic vinegar
1 TBS olive oil
1 TBS fresh rosemary chopped
1 clove garlic, finely chopped
1/2 tsp salt 1/4 tsp pepper
4 boneless skinless chicken breasts

Combine vinegar, olive oil, rosemary, garlic, salt & pepper in med. bowl. Add chicken breasts. Marinate covered in refrigerator for 30 minutes.

Broil chicken in broiler 6 inches from heat for 8 minutes or til cooked thru – turning once. You can also grill on the BBQ, but make sure they don’t dry out when cooking.

These were really good! I followed the recipe exactly (except that I marinated them for a few hours) and threw them on barbeque for about 10 minutes on medium. I was really surprised by how delicious and juicy they were. This is definitely go into my rotation!

I just started the diet yesterday and I don’t think I’ll have a problem with it at all but then I cook. My boyfriend works a 14/14 rotation in ND and doesn’t cook so much and he’s a tad afraid of this. However, look at how simple this is? He could cook up 4 breasts, have one for dinner and the other for lunch or whatever. This is an awesome way to eat healthier! Thanks for the recipe. It’s on for tonight!

Haven’t started the diet, but wanted to try this recipe. It was really good. Tomorrow will be the day I will start this diet. Can’t wait.
