I’ve been going through some of my pre-17DD recipes and converting them. Here’s one that didn’t even need converting:
Tomato Soup – Fresh (C1)
5 cups fresh tomatoes, diced (you can peel them or not – your choice) 1 Tbsp tomato paste 4 cups low sodium chicken broth 1 carrot, grated 1 onion, minced 1 Tbsp garlic, minced 1 tsp dried basil 2 Tbsp lemon juice 1 bay leaf
Combine ingredients in a slow cooker. **
Cook on low for 6-8 hours, stirring once while cooking.
Remove bay leaf before serving.
** This could easily be done stove-top. I’m thinking 1 ½ hours, stirring until the diced tomatoes are broken up.
