17 day diet stuffed peppers - cycle 1

17-Day Diet Stuffed Peppers

4 bell peppers, any color

1 pound ground turkey breast

1 large onion, chopped

2 cloves garlic, minced

4 roma tomatoes, seeded and chopped

¼ cup egg substitute

1 tablespoon Worchestershire sauce

Pinch crushed red pepper flakes, or
to taste

Salt and pepper to taste

 

Cut off tops of peppers and remove
seeds and membranes. Reserve tops. Place peppers in pot of salted boiling water
and parboil for 3-4 minutes. Remove and drain.

 

Chop reserved pepper tops and place
in large bowl. Add remaining ingredients and stir to combine.

 

Slice small pieces off bottoms of
peppers if necessary for them to stand upright.

 

Fill peppers with mixture. Place in small,
deep baking dish coated with cooking spray. Cover loosely with foil and bake 20
minutes at 350. Remove foil and bake uncovered for 15 minutes, until turkey is
cooked through.

 

If desired, top with salsa or diced
canned tomatoes that have been heated and drained. 

 

Makes four servings.

I make them just about the same but like hot food so add a can og Rotellie (sp) tomatoes and a bag of cole slawcut cabbage. Now that I’m in cycle 2 I also added quinoa and loved it.

I’ve enjoyed making stuffed peppers a few times this week too. They really give you the satisfying full meal feeling without the carbs. Thanks for a great recipe!

That sounds fantastic. I’ve never made stuffed peppers before. Do you cook the ground turkey breast prior to combining all the ingredients?

danioreed, no need to cook the turkey beforehand. Enjoy!

Danioreed – Not sure if I did something wrong – but I did cook the ground turkey. I followed the recipe as is and after the time was up noticed the tops of the peppers were very watery and the turkey raw. So I dumped them out of the peppers and cooked the contents ont the stove top, put them back into the peppers and baked a little while to crisp the top up.

Again, not sure if I did something wrong, but next time I will cook them turkey first! Same thing happened with the turkey meatloaf – didn’t cook through!
