One Healthy Vegetable Soup!

Use all FRESH vegetables if at all possible!

1 each and sliced

Green pepper

Red pepper

Yellow pepper

Orange pepper

4 onions, chopped

5-7 garlic cloves, minced or chopped

1 package FRESH mushrooms, chopped

1 package celery, chopped

1 package carrots, chopped or shredded

4 large tomatoes, sliced

1 bunch FRESH cilantro, chopped

2-4 tomatillos, sliced

 

Wash all produce thoroughly.  (I do NOT peel my vegetables.)

 

Place 1-2 Tbs OLIVE oil in large sauce pan (4-5 qt). Turn the pan on to the VERY lowest setting.  Do NOTadd water or ANY seasonings.  Chop and add mushrooms and garlic to warming oil.  Cover with lid.  As you chop each vegetable, add it to the pot. Keep the vegetables covered throughout cooking to retain natural moisture.  Simmer until veggies are the tenderness desired. 

Makes 4 – 8 servings – - – depending how hungry you are! ?

 

I developed this recipe after my increasing battle with obesity.  I like vegetables, but I have a hard time “getting them all in” every day!  This simple dish does it for me.  I refrigerate or freeze it in small 8-oz. containers.  Sometimes, I put the simmered veggies into the blender and make a veggie smoothie!

 

This recipe creates its own sweet flavor.  I neverput any seasonings in it.  If you have a meat-eater in the family, you can add cooked chicken, beef, shrimp, etc.  Persons with blood pressure or diabetic conditions will not battle the added salt and sugars in this water or broth.  This can be eaten cold or warmed.
