gluten/caesin/soy intolerant, help!

Just found out I am gluten/giladin intolerant (may have Celiac Disease). My doctor told me to avoid soy because it has the exact same molecular structure as wheat with the exception of one little tiny piece of the molecule!! I cannot find anything to substantiate this. He even wants me to avoid dairy. So restrictive and hard to find things that are GFCFSF (gluten/casein/soy free). HELP, please!!

I am 25 years old and I can't make the pain go away. it hurts so bad that I barely could sleep at night. I went & got my weigh in done. This week has been long & hard. I did lose 6 1/2lbs this week. Which brings my total weight lose to 21 1/2lbs in 4 weeks. I craved sweets all week long. If a patient is given a terminal diagnosis with absolutley no chance to survive, can not speak for themselves any longer, and didn't make their wishes known, but the family wants everything done anyway....dialyis, ventilator, everything, knowing it is not going to help the patient recover, should the family be made to pay instead of the insurance company or medicare?
