About Me
I am a semi retired Human Resources Consultant who loves to grow my own vegitables, cook, and enjoy my wife of 39 years, my son Matthew and my Daughter Taylor. After 3 heart attacks and 5 stents I love every day of life and feel that each day is a gift. When I treat each day with that attitude I have mostly very good days. I golf when I can and really appreciate the time I get to spend with my Nephew - Robert. My style is laid back but I work hard - especially in my garden. I use the "square foot" planting style that uses raised, contained beds, with "Mel's Mix" of compost, vermiculite, and peat moss and grow mostly organics.

Duke's Mayo-Free Egg & Chicken Salad
3 Boiled Eggs - Diced
2 ounces - Pickle Relish
2 tsp - Extra Virgin Olive Oil
1/2 Cup Diced Onion (Vidalia, Texas Sweet, or Walla Walla are best)
1/4 Cup Plain Low Fat Yogurt
2 Cups Chicken Breast (stringed and chopped)
Mix/stir relish, eggs, and add yogurt slowly
to desired consistency (reduce yogurt for a
drier mix)add onions, chicken and hand mix/stir Salt & Pepper or Nature's Seasoning to taste
Serve on favorite fresh lettuce leaf & wrap (Romain is best)
Optional For Spicy: 2/3 tsp. chopped fresh
Cilantro, 1/2 clove pressed garlic
3-4 Servings
